Y'all!

Most days, I don't have to cook. Simply because we live on the same road with my in-loves and when they cook, they cook enough for the community chile. On the other days, my sweet husband will bring food home after work. But get this, sometimes he will walk through the door with both. His family will cook AND he'll bring food home...

This sister will never miss a meal chile!

On the days I do decide to cook, I loooovvveee trying new recipes. My husband is a foodie. Most of all, he loves seafood (shrimp for sure) and rice. So it's not uncommon to have an unopened bag of shrimp in the freezer for a rainy day. So the only thing left for me to do is to figure out (google) what to match with the shrimp. :-)

So, for tonights fancy shrimp dinner I decided to try what you call a "Twice Baked Shrimp Potato!" Y'all it's as good as it sounds... Hubby was impressed! His mom has made them before, but tonight was my time to add a little 'Finicky Wife' touch.

This meal is less than $30 and here's what you'll need:

1. Shrimp

2. Potatoes (if you want to make 2, purchase 4 in all)

3. Whatever seasoning you like ( I use everything in the cabinet lol)

4. Vegetable oil

5. Butter

6. Whipping Cream

7. Parmesan cheese 

8. Cheddar cheese

Potatoes: Wash potatoes. Poke holes all around potatoes with fork. Rub vegetable oil on potatoes. Bake potatoes on 350 in a pan lined with aluminum foil for 1 hour and 30 minutes. If preparing 2 potatoes to eat, remember to prepare 4 in all. Peel & mash 2 of the 4 potatoes. Add butter, seasoning, cheddar & parmesan cheese, a little whipping cream. (stir) 

Shrimp: Peel & clean. Season to taste. Sauté in butter 2 minutes on each side over medium heat. Remove shrimp, add more butter and whipping cream to the shrimp residue. Stir in seasoning, cheddar & parmesan cheese. (amount of whipping cream is determined by how thick you want your sauce)

Combine: (mashed)potatoes, shrimp, and sauce. (leave a little sauce)

Open the other two 'whole' potatoes down the middle. Take a fork and make them a little messy..lol.. pour melted butter, add a little season, then pound your stuffing(potato, shrimp, sauce combination) on top. Stack as high and as much as you can. Pour more of your leftover sauce on top. Add more cheddar and parmesan cheese. Broil in oven for 5 minutes.

EAT!

Hope y'all enjoy as much as hubby did! I asked for a pair of shoes afterwards and he said YES! LOL...
