...when the coins are spent, you figure it out! #LoadedBreakfastCasserole

Hey y'all!

I tell ya what! It's hard not robbing Peter to pay Paul sometimes chille! Because listen, I surely had to do some rearranging of the coins this past week.

So here's the thing, if you are following me on social media, then you know that I have started a new fitness program called Be Your Own Body Goals in hopes of getting into shape as well getting a bigger booty. (Don't judge me, umkay!) Well, this month I had to tell the coins to go somewhere else instead investing in the fitness program. Nevertheless, I am still on the journey of being healthy so that I can carry all of my husband's babies (in Jesus Name), getting my big booty & I'll take some nice legs, abs, and toned arms while I am at it. LOL

Anywho, since I don't have anyone coaching me per say, I had to do some extensive research on my own within the last 24 hours and behold, I found this DEEE- LICIOUS breakfast casserole recipe y'all! It is loaded with all the hearty stuff and some healthy stuff too. Perfect for those on the go and MEAL PREP!

So let's get right to it!

Y'all this breakfast casserole is loaded with different seasoning, onions, roasted sweet potato, bell peppers, bacon, & breakfast sausage, eggs, milk, etc.

Here's what you will need including measurements:

  • 1 pound sweet potato, peeled and diced into 1/2" cubes
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • salt and pepper
  • 8 ounces bacon
  • 1 pound breakfast sausage
  • 1/2 large onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 12 large eggs
  • 1/3 cup milk 

Here are the cooking instructions:

Preheat your oven to 400F.

Peel & dice sweet potatoes, cover with olive oil, garlic powder, paprika, cumin, salt, and pepper in baking dish. Cook/bake for 30 min.

Add slices of bacon to a different baking dish. Cook/bake until done & crispy while cooking/baking potatoes.

Cook/brown the breakfast sausage in a pan on the stove on medium high heat and drain all but a tablespoon of grease for next step.

Saute your onions, bell pepper, and minced garlic in the leftover tablespoon of grease for 4-5 minutes. 

Once done, add all of the above ingredients to baking dish. Potatoes, crush bacon into pieces, sausage, onions, bell peppers, garlic, etc.

Season again/more if you like.

Stir eggs and milk in a bowl separate bowl, them pour mixture over all of the other ingredients in the baking dish.

Cook/bake for 25-30 minutes.

Make sure center is cooked and edges are slightly crunchy & golden.
